What are virgin oysters?

Generally, adult oysters that have been cultivated for over a year and have spawned at least once are sold and consumed. However, in recent years, so-called virgin oysters (oysters that have not spawned since emerging as eggs, within the last 10 months) have become mainstream in oyster bars overseas. Although small, they have a firm flavor, no unpleasant odor, and a strong sweetness. They are also bite-sized, allowing you to fully enjoy the true taste of an oyster in one bite. Among these virgin oysters, the small oysters that are planted here in Shiozu during the cherry blossom season and develop their flesh from late November to December are called "cherry oysters."
As the oysters on the top shelf will run out by the end of February, we will be selling a limited quantity throughout February. We may stop accepting orders for the day once the oysters are sold out.
Therefore, we plan to hold an oyster festival in March using oysters from my mentor. More details about the oyster festival will be announced on our website at a later date.
We will announce the reopening date on our website once the plants on the second shelf have grown.

taste
These oysters lack the strong, distinctive odor of typical oysters and have a strong sweetness, making them popular even among those who don't usually like oysters or those trying them for the first time.

Scissors
These oysters are small in size and have very thin shells, eliminating the need to open the shells with a knife or other tools, which is often a challenge when eating oysters raw or cooked. Even children can easily cut open the shells with kitchen scissors from a 100-yen store.

microwave oven
To heat them, simply arrange 6-7 oysters on a plate, cover with plastic wrap, and heat in a 600W microwave for about 2 minutes. They can be easily prepared at home.
